For generations, Bahamian kitchens have had one condiment that rarely leaves the table: pepper sauce. Splashed over chicken souse, drizzled on fried fish, or added to almost any meal needing an extra kick, it’s a staple woven into the country’s culinary identity. Now, one young Abaco chef hopes to introduce what could be a cousin to the condiment — a bold, spicy sweet vinaigrette set to hit store shelves at Maxwell’s Supermarket and Home Store.
“It’s bold, it’s spicy, it’s smooth and vibrant,” says Dahlia Bosfield, the creative chef behind Signature Sweet Heat Dressing. “This dressing has the perfect balance of both sweet and spicy and it’s made with the most simple and fresh ingredients.”
At just 28 years old, Bosfield wears two hats. She serves as Senior Chef de Partie at Baker’s Bay Golf & Ocean Club while also operating The Real Chef Experience, a catering company specializing in luxury private dining experiences. It was while developing a pop-up lunch menu for local customers that she unexpectedly created what has become one of Abaco’s newest culinary phenomenons.
“I always hear people say they want something different to eat in Abaco,” Bosfield recalls. “I thought ‘Why not try to make a Chipotle-inspired bowl?’’ I knew if I made that, then I’d also need to have vinaigrette. I tried to mimic their recipe, but in trying to mimic it I created something completely my own.”
Bosfield admits the rave reviews from local clients took her by surprise. While many fell in love with her inspired bowls, it was clear the sweet, savory, spicy blend drizzled atop the bowl was the star of the show. It wasn’t until a few weeks later that the chef realized she struck lightning in a bottle.

“I catered for an American family who requested a Mexican-themed dinner,” she said. “I brought some of the dressing for them to try on their tacos and before they even finished eating, they came into the kitchen asking, ‘What is that sauce? Do you have bottles? Do you sell it?'”
That moment sparked the beginning of a new venture.
Bosfield immediately shifted her focus to product development, perfecting the recipe, creating the brand and finally bottling dressing for retail.
“I launched on social media first and then hosted a sample tasting at Maxwell’s on July 11th,” says Bosfield. “I served between 100 and 150 people that day and completely ran out of dressing. It’s still shocking. The support that I received brought tears to my eyes. There were people trying to purchase it on the spot.”
The response was enough to catch the attention of Maxwell’s, who later agreed with Bosfield to stock the product, marking a significant milestone for what had once been a kitchen experiment.
“I want people when they taste this dressing for the first time, they taste love because it was definitely made with love. I want them to know that this isn’t just a dressing for salads. It can be used as a dip, it can be used as a marinade. It’s versatile and that’s what makes it so special.”
Beginning July 30, shoppers in Abaco will be able to find Signature Sweet Heat Dressing on the shelves at Maxwell’s Supermarket & Home Store. Bosfield hopes the retail debut is only the beginning, with plans to expand into stores throughout New Providence and eventually across The Bahamas.
